Krayasart

Festive Dessert

	 Krayasart is a stirred dessert, made from roasted and shredded rice grain, roasted crispy
popped rice, roasted peanuts, roasted white sesame, sugar cane or coconut sugar and undiluted
coconut milk. All are stirred together until sticky and forming lumps. It is then placed on dry banana
leaves, turning it into thin or thick sheets as required.
	 The word โ€œkrayaโ€ means food. It is food that is made at festivals during the waning lunar
month, offering merits to the deceased as appeared in the book entitled โ€œNiras Duanโ€ written by
Mr Mee in the Ratanakosin period.
	 Krayasart is an extremely sweet dessert. It can be kept for a long period of time.  It is eaten
with golden bananas which are plentiful in the 10th lunar month.  It has nutritional values, complete
in the 4 groups namely carbohydrate from popped rice and crispy rice, protein from peanuts and
sesame, fat from coconut milk and sesame, vitamin and minerals from the golden bananas.  It is
a dessert that gives energy to human bodies and can be developed into health food.
	 Nowadays, Krayasart can be bought anywhere. Glucose syrup is added to make it even
more sticky, putting in more sugar as well rendering it an ultra-sweet stirred dessert.  It is also hard
and therefore difficult to eat. Consequently, its popularity has dropped. It should be registered to
safeguard the quality and for further development.
	 Krayasart is registered as Thai Cultural Heritage in 2013.
