Khao Tom Mud

Rice Dumplings with Banana Fillings wrapped in banana Leaves

	 โ€œKhao Tom Mudโ€ is a regional dessert offered to the monks during the Tew Festival and
at the end of Buddhist Lent Day.  It is made everywhere in the country in different names.  The
ingredients and the method of making it may differ a little but still retain the distinctive identity
such as glutinous rice, cultivated banana, sugar and a bit of salt, wrapped in banana leaves or any
available natural materials in the regions.

	 In Lanna literature in the legend of Phra Chao Liablok, in Buddha era, people like to make
merits offering โ€œKhao Tom Mudโ€™ to the monks because it is convenient, easy to eat and can be
kept a long time.  The monks can use as provisions when going on trips to disseminate Buddhaโ€™s
teaching.

	 Method of Preparation: soak the glutinous rice in water (or โ€œmaโ€ in the northern and
e-sarn language) for about 2-3 hours. Drain. Wrap with banana leaves prepared overnight.  Stuff
with banana. Steam till cooked.

	 โ€œKhao Tom Mudโ€ of โ€œKhao Tom Pudโ€ of the central region: fry the glutinous rice with
coconut milk, mixed with a little bit of sugar and salt, dried out till the glutinous rice becomes
sticky and glossy.  Put it on banana leaves, spreading it out in thin sheets.  Put the cultivated
banana on top decorated with black beans.  Wrap up the banana leaves.  Tie them together in
pairs with bamboo strings.  Boil in water.  If steamed, there is no need to tie them together.  Simply
lie them next to one another in the steam pot.

	 โ€œKhao Tom Mudโ€ in the northeastern region: in some parts, they are called โ€œKhao Tom
Gluayโ€.  There are two methods pf preparing it.  The first one is like the central region.  The second
one is without coconut milk.  The glutinous rice is mixed with black beans or peanuts.  Soak with
a little bit of salty water.  Wrap in banana leaves.  Tie them up with bamboo or banana strings in
2-3 parts.  Boil till cooked.
