Fermented catfish are full of nutrition. It is a kind of Thai cuisine that shows wisdom of
the Thai people who have tried to find methods to preserve food like fish which are abundant in
the rainy season for consuming in the drought. Not only are fermented catfish delicious, but they
also give a great deal of nutrition.
	 Fermented catfish is plentiful in protein which is full of essential amino acid, such as Lysine
and Threonine which help the growth of children and the repair of all kinds of tissues. Moreover,
fermented catfish contain unsaturated fatty acid, such as EPA and DHA which prevent coronary
artery disease and are the composition of nerve cells which help develop the brain. Also, the
fermented catfish give necessary minerals, such as calcium, phosphorus and iron. 	
	 Nowadays, a number of changes in natural resources have taken place in Thalay Noi and
Pak Panang River Basin, leading to the decrease in natural fish. Because of the decrease in natural
fish, farmed catfish are mostly used for making fermented catfish. Due to the delicious taste of
fermented fish, they are popular and are produced for commerce. There are many communities
which produce fermented catfish for commerce, such as Thalay Noi and Ban Ngog Nam, Nakhayard
Subdistrict, Khun Khanun District, Phatthalung Province and Karaked and Khoa Phrabat in Chiang
Yai District as well as Tha Sak, Muang District, Nakhon Si Thammarat Province.
	 Fermented catfish has been registered as Thai Cultural Heritage in 2015.
